An Email From Jenna ~ Im in guatemala!!


I was so excited this morning when I opened my mailbox and there was an email from my sweet traveling Jenna!!! Due to the nature of her trip...and the expense of country to country calls, we've not heard from her since she left on New Years Day..let me tell you..not an easy thing to handle as we've had no idea whether she was safe or not....however, we assumed all was fine due to the fact that Paul Smiths' College had not contacted us...you have to go with the ...no news is good news ....kinda thing in these situations..very hard to get use to!!!! Anyway, there are internet cafe's where they are now...therefore she was able to send an email..I'll share it with you.....as, she's so very excited...it's just so adorable!!!!


Hi mom!!!!!!!!!!!!!
oh...my...god... i am having the time of my life...we made it here safely and everything is going wonderful!! we spent a couple days in Antigua, last night we hiked up a volcano...it was the hardest thing i{ve ever done in my life but it was so worth it...the view from the top was amazing...i saw lava and all sorts of stuff it was so cool. we camped out up there and then climbed down in the morning then drove to this lake that we{re at right now...it is so beautiful everywhere we{ve gone...right now we are in a 5 star resort in the town of panajachel on lake atitlan...it{s amazing...we havent roughed it so far at all it{s been so wonderful. Im seriously having the time of my life. i wish you could come here with me and see it all you{d be amazed!!! We have sooo much more stuff to do it{s gonna be amazing. I{m not sure if i{m going to be able to go on the internet again for the rest of the trip but i just wanted to shoot you an email and tell you that i{m ok and having the best time ive ever had...Tell everyone i said hi and i miss them....I LOVE YOU!!!!!!!!!!!!!!!!!!!!!!

To answer your question, I would be hesitant to use fresh apples. I think if you cooked them first to get them a bit soft they would work, but I would be afraid that raw apples wouldn’t cook enough, that’s why the canned ones work so well. Blueberries would be perfect. I let them defrost just enough to get them separated, and then I put them all over the top. Cover the top but leave a little space in between so the batter can rise up around them.

Let me know how it turns out. This is a cake we have all the time. It’s like a great pound cake with fruit. I hope you like it!

Your daughter sure is brave! Glad she's having the time of her life! She'll remember and enjoy her travels for her entire life! But it sure is hard to let the little chicks go running all over creation, isn't it??!! Wish I could keep my son safely tucked under Olde Mother Hen's wing!!! But out they run!

Oh, I camped all over while in college! my Mom would worry and I always reminded her that No News is Good News!! so I dread when my girls are old enough because the oldest has the traveling bug like her Mom:)

You've sure had a lot of ice this year. Is that normal? Sure would love to have a wood stove because we've had bad ice the last few years. What a great adventure your daughter is having. When mine left on hers they didn't have internet cafes or cell phones & it wasn't a college trip. Sure was glad when that was over! Have a great day & stay warm. Jan

Oh D!! I have tears in my eyes right now. I can't even imagine how worried you must have been and still must be. But the fact that your sweet daughter took the time to email you telling you that she wished she could share the BEST TIME OF HER LIFE with YOU is so precious. It makes every minute of parenting worth it. You are a dear person and it just shines through your daughter. Everything that you have taken the time to instill in her and teach her has worked. Isn't that the BEST feeling ever? I am so moved by this! Thanks for sharing!
